Probiotic: Why the Strict Definition Excludes Most Fermented Foods
Live microorganisms which, when administered in adequate amounts, confer a health benefit on the host. Each clause excludes something: pasteurised products aren't live, trace quantities aren't adequate doses, and benefits are demonstrated per strain rather than per species or genus — so evidence for L. rhamnosus GG says nothing about another L. rhamnosus strain. In many jurisdictions the word itself is unprotected on labels.
A **probiotic** is defined as *live microorganisms which, when administered in adequate amounts, confer a health benefit on the host* — the formulation adopted by the FAO and WHO and endorsed by the International Scientific Association for Probiotics and Prebiotics. Each clause is doing work, and together they exclude most of what is marketed as probiotic. ## The three requirements **Live.** Pasteurised or heat-treated products contain no viable organisms and cannot be probiotics by definition, whatever the label implies. Dead microbial preparations may still have effects, but they belong to a separate category — see Prebiotics, Probiotics, Synbiotics and Postbiotics: The Terminology. **Adequate amounts.** Benefits are dose-dependent, and the effective dose is established per strain. A product containing a trace of a beneficial organism is not delivering a probiotic dose. **A demonstrated health benefit — for that specific strain.** This is the requirement most often ignored. Probiotic effects are **strain-specific**, not species-specific or genus-specific. *Lactobacillus rhamnosus* GG has clinical evidence behind it; a different *L. rhamnosus* strain does not inherit that evidence. Marketing that cites research on a genus while selling an unrelated strain is claiming something the evidence does not support. Strain designation is why properly labelled products name a strain code — *Lacticaseibacillus rhamnosus* GG, *Bifidobacterium longum* 35624 — rather than just a species. ## Why fermented foods usually don't qualify Live-culture fermented foods — kombucha, sauerkraut, kimchi, most yoghurt — generally contain undefined and variable microbial communities at unmeasured doses, and rarely have trial evidence attached to the specific product. They are correctly described as **fermented foods containing live cultures**. That is not a dismissal. Fermented foods plausibly contribute to microbial diversity and are associated with benefits in observational and some interventional work. The point is that the claim "contains live cultures" and the claim "is a probiotic" are different claims, and only the first is usually supportable. See Is Kombucha a Probiotic? What the Clinical Trials Actually Show. ## The regulatory gap In many jurisdictions "probiotic" is not a protected term on food or supplement labels, so the word can appear without the definition being met. Health claims are regulated more tightly than the term itself — in the EU, "probiotic" on a label has been treated as an implied health claim and restricted for that reason.
