Bacillus cereus: Spore-Forming Cause of "Fried Rice Syndrome"
Bacillus cereus is a spore-forming bacterium behind two distinct foodborne illnesses: a fast-acting vomiting syndrome from the heat-stable toxin cereulide (the classic "fried rice syndrome") and a slower diarrheal syndrome from heat-labile enterotoxins. Because its spores survive normal cooking, the danger comes from leaving cooked starchy food at room temperature, where surviving spores germinate and multiply.

The Maillard reaction is a chemical reaction between amino acids and reducing sugars that produces the brown color and savory flavor of seared meat, bread crust, and roasted coffee. Described by Louis-Camille Maillard in 1912, it runs fastest around 140-165°C and requires a dry, hot surface.

Oyster mushrooms are white-rot fungi secreting cellulases, hemicellulases and the laccases and peroxidases that degrade lignin — the shield that makes cellulose inaccessible even to cellulase-equipped organisms. Developed systematically by N. W. Pirie at Rothamsted: pulp leaves, press, heat the juice to about 80 °C to coagulate protein, eat the curd and discard the fibrous cake. Delivers protein, carotenoids, vitamin K and minerals — not calories, since the energy is in the cell wall being discarded. Freezing ruptures cells and multiplies extraction; blanching inactivates plant proteases; milling, pressing and centrifugation refine rather than create. Wheatgrass juice is the consumer descendant.
